The end of the Whole30 is near. Just a few short days left. Friday I will share with you what I’ve learned (and it’s a lot!), but for today, I will say the Whole30 has brought up a ton of eating/food/cooking conversations that have have got me thinking. I’m a physician and while at work the other day, my college-aged scribes had been asking me about easy, college approved dinner recipes (preferably with leftovers) that would not break the bank. Although I agreed to tackle that one (coming soon) I also got to thinking…how can these guys impress their dates? (We didn’t actually TALK about this part of their lives at all-and I can feel them blushing as I write this, you never know when this advice will come in handy!) Which then led me to remember how my own husband made me dinner while we were dating… which leads to Shakshuka (Whole30, Vegetarian, and How to Impress Your Date) and a few funny photos!

The New Year is here and with it, comes a whole lot of focus on health and wellness. If you’ve been following along on Instagram or Facebook (or even here on the blog!), you might have noticed that Lane is currently in the middle of her first Whole30 experience. It’s holiday crunch time and I don’t know about you, but I’m feeling a little bit of the pressure. One of my favorite things to do during these busy times is to use make ahead or easy prep recipes to decrease my workload on big cooking days, like Christmas! I love to have a special breakfast treat for Christmas morning, but I don’t love the idea of being stuck in the kitchen while everyone else is opening gifts or sitting by the fireplace. There’s something so warm and cozy about a good brunch, right? I always appreciate a lazy morning full of good food during this crazy holiday season. I feel like I should have titled this blog post “confessions of a food blogger” because I’m about to let you in on a dirty little secret. Are you ready? Here it goes: I am the parent of a picky eater. A really picky eater. Yes, that is correct. This food blogging mama has a little one who will barely eat anything resembling real food. She is my two year old, blonde, sassy little bit of dynamite who has a definite mind of her own, especially when it comes to food. She essentially has five approved foods: cheese, yogurt, bread, scrambled eggs, and pancakes. Anything outside those groups is almost guaranteed to be refused and so I’ve had to get creative in my cooking. I developed these Pumpkin Ricotta Pancakes to try and sneak a little protein into my girl’s favorite breakfast. Our whole family loved them and I thought you might, too!

My husband eats a bowl of yogurt with granola every single morning. Has anyone else had a bumper crop of zucchini this summer? My tiny backyard garden has been producing zucchini which are the size of clubs. I’ve shredded and frozen more zucchini this summer than I’ve seen in my life. And of course as I’ve been shredding my zucchini, I’ve had to make my Chocolate Chip Zucchini Bread. Strangely, even though this quick bread really can’t be qualified as “healthy”, in my book it is because…well, ZUCCHINI!

Is there anyone out there who doesn’t love monkey bread? I mean, there is just something so dang good about about it. It’s a gooey, sugary, buttery carbohydrate filled brunch classic that I love to make and love to eat. Growing up, my mom often made it in a simple bundt pan, coating each piece of biscuit dough with plenty of butter, sugar, and cinnamon so that when it came out of the oven, it was like mini-cinnamon roll heaven. A few years ago, I started making it in my cast iron skillet. I loved the cripsy edges it created and really loved the easy clean up and presentation of the skillet. Recently, I decided to change up the bread itself and this Lemon Cardamom Skillet Monkey Bread was born.
