Good Food Reads: Heat Wave

Heat WaveLike much of the country right now, Minnesota is in the midst of a summer heat wave. Temperatures have been hovering in the 90s the last few days with high humidity, making the state feel down right tropical. I am actually a huge fan of the hot and humid days of summer – especially considering what winter can be like around here! That being said, I will fully admit that when it’s steamy outside, the last thing I want to be doing is standing over a hot stove or turning up the oven to bake. This week’s Good Food Reads is full of no bake or minimal heat required recipes perfect for summer! Many of them are easily portable for outdoor gatherings or trips to the beach or cabin. I know I’m planning to whip up a few of them tomorrow to have ready for the weekend ahead. What are your favorite go to recipes when the temperature rises? Let’s start things off with a frosty beverage, shall we? This Frozen Mint Lemonade is absolutely perfect for a hot summer day (or eve). If you’re looking for a breakfast treat, try our Simple Summer Green Smoothie.

This recipe for Cold Southwestern Corn and Shrimp Soup uses frozen corn. Genius!

Technically this recipe for a Grilled Vegetable Platter recommends that the veggies be served warm, but I think they would be equally amazing as a chilled appetizer or side dish. And yes, you have to grill them, but grilling and summertime go together so I’ll be forgiven for breaking my no heat rule, right?

I absolutely love crisp salads when it’s hot out and this Antipasto Salad couldn’t be easier and more full of big flavor! No boring supermarket salad here.

BLT Salad with Olive Vinaigrette, with bacon made in the microwave. No cooking needed!

Check out these absolutely gorgeous Rainbow “Rawmaine” Taco Boats from Minimalist Baker. I’m not a huge fan of beets, but darn it if that beet hummus isn’t crazy beautiful. I think I’ll give it a try!

Our very own Greek Chicken and Barley Salad is on repeat in the summer months around here. I use rotisserie chicken so definitely no cooking required. The best part is, the recipe makes a generous amount and leftovers are the best.

If you want to feel like a kid again, but with a grown up palate: Mango Lassi Popsicles. YUM.

And because we all need dessert: Peanut Butter Pretzel Pie. I know my husband will go crazy for this one. I also love our Chocolate Peanut Butter Torte!

Finally, it wouldn’t be a Good Food Reads without a cocktail, right? Watermelon Tequila Popsicles. Perfect for an evening on the porch!

Good Food Reads: Grilling

Good Food Reads Grilling EditionHi y’all!  Holly and I recently discovered the grill.  I know, I know, I’m sure many of you are sighing, I mean really, why in the world have two avid home cooks NOT been using the grill?  I will tell you though, for both of us, the grill has previously been the baby of our husbands, and you know how those guys can get…territorial.  Plus both of us are super busy moms (with four kids between us), run this blog, run bookclubs (hi ladies!), and work FULL TIME!  Far be it for us to look a gift horse…or whatever that crazy cliche is!  Someone was going to feed the kids and give us a night off-we ACCEPT!

Alas…there was a day recently that there was no husband around (yep, they work too) and therefore we had to figure it out.  Turns out all of that fancy schooling we did paid off…the gas grill was conquered!  To be honest, all we had to do was grill some bread for an appetizer, so not rocket science, but hey, we have to start somewhere!  So for this episode of Good Food Reads we wanted to pay homage to the grill.  And because Minnesota summer is so beautiful for grilling we also wanted to introduce you to some local Minnesota bloggers.  Ready?  Read on for some amazing grilling recipes…

Good Food Reads: Berry Season

BerriesThere are a lot of things to love about June but one of my favorites is that it is finally berry season! I am a fairly equal opportunity fruit eater but give me a fresh pint of raspberries or a bowl of plump, just picked strawberries and I will eat the entire thing every single time. There is just nothing like fresh berries at the height of the season. My four year old son is also a berry lover and on the days when he eats an entire container of organic blueberries by himself I am grateful for Costco and their amazing organic fruit options! Since my personal fridge is currently filled to the brim with blueberries, strawberries, raspberries and blackberries, I thought a collection of berry themed recipes might be just the thing for this week’s Good Food Reads. Good Food Reads: The Vegetarian Edition

Good Food Reads VegetarianSome of you may know this, but I spent almost 16 years of my life as a vegetarian. From about age 12 until a few months before my 28th birthday, I lived the veggie life. My reasons for going vegetarian (and then staying veggie!) changed over the years, and while I’m now definitely an omnivore, I still try to keep about half of my meals plant based and really don’t miss meat when I’m focusing on such great food! Over the years I’ve built up a pretty great personal collection of vegetarian recipes but I’m always on the hunt for more so for this week’s Good Food Reads, we are going veg! I promise, there is something for everyone and the meat lovers in your life won’t even miss it.

I’m so intrigued by this 5 Minute Macadamia Cheese and Vegan Crudité from Minimalist Baker. I’m not going to lie, I’ll probably stick with non-vegan cheese, but the photos are so gorgeous I could probably be convinced to give it a try! Those roasted carrots are making me so hungry right now.

Grilled Corn, Tomato, and Avocado Salad with Chimichurri. So many of my favorite things in one dish. Can’t wait to give it a try.

Roasted Vegetables with Creamy Romesco & Farro from Vegetarian Heartland. I love all the colorful veggies!

Don’t forget the grill! When I was a full time vegetarian, I always struggled to enjoy those boxed veggie burgers (Boca cheeseburgers usually won out). I can’t wait to give these Wild Rice Veggie Burgers with Herbed Ricotta a try for our next grilling session. Another option? This Sweet Potato and Mushroom Quinoa Burger. I doubt the meat will be missed!

Where there are burgers, there should probably be fries. I’m ready to tackle these Sesame Garlic Grilled Sweet Potato Fries with Yogurt Curry Dip.

A fresh, vegetarian take on the classic summer pasta side dish: Creamy Greek Pasta Salad.

Instant Pot Hummus with Chimichurri. I love hummus and love to make it at home but can never seem to plan ahead enough to soak the beans and end up using canned. Maybe it will be InstantPot to the rescue!

Meal Prep Mediterranean Bowls – for making those busy work days a little less crazy. LOVE the inclusion of marinated feta. So yum! These Almond-Sesame Soba Noodles with Quick Pickled Vegetables would be amazing as well.

Ok, this isn’t a recipe but have you guys seen these DIY Terracotta Wine Chillers? I have exactly zero pinterest type craft skills but maybe I could pull one of these off?

Good Food Reads

It has been a crazy busy week, as most of them are towards the end of the school year.  My kids don’t have their last day of school until next week, but the past two weeks have been chock full of end of the year parties, teacher gifts, graduation festivities, end of the year orchestra concerts, dance recitals, and let’s not forget the never ending soccer games!  When you put that on top of a full time work schedule, well…whew, I’m starting to get tuckered out!  And I must admit my belly is growing very tired of all of the fast and fast casual food we’ve been eating (not to mention guilty) as we fly around from one activity from another.  It’s time to reintroduce vegetables and clean eating to our diets.  These salads we’ve found all over the internet will be a great way to start that process…and they are anything but boring!  So keep reading for a Good Food Reads dedicated to salads!…

It’s finally here! The unofficial kick off weekend to my favorite time of year: SUMMER. Though I live in Minnesota, land of the cold (at least from December to March), I am a warm weather girl all the way. I love nothing more than bare feet and summery dresses on a perfect 80 degree day. I also love summertime eating, full of fresh fruits and vegetables, frequent grill meals, and creative cocktails by the water.
