It’s finally here! The unofficial kick off weekend to my favorite time of year: SUMMER. Though I live in Minnesota, land of the cold (at least from December to March), I am a warm weather girl all the way. I love nothing more than bare feet and summery dresses on a perfect 80 degree day. I also love summertime eating, full of fresh fruits and vegetables, frequent grill meals, and creative cocktails by the water. Spring has sprung. Have I mentioned how much I love spring? The birds are singing, the tulips have bloomed and I can finally send my kids to school without a jacket! Just last week, Holly and I attended our first Wildtree party to put together freezer meals that our husbands could grill while we were at work. We had a great time drinking wine and hanging out with friends (that we hadn’t seen in far too long!) while putting together a wide array of freezer meals. Total win. But despite the beautiful weather and the crazy chaotic activity schedule, we are never too busy to bring you another edition of Good Food Reads. Let’s get started shall we? …
Good Food Reads II 04.28.17
Here in Minneapolis it is theoretically getting warmer, although today I trudged my son out to the bus stop through snow flurries. Sigh. Excuse me if I’m just a tad down about that. But I do plan on spending the weekend at my cabin doing some recipe development for a new partnership we have entered. More on that soon, but that ensures this weekend will be sunshine-y, no matter what the weather! But first, let’s get started with this week’s edition of Good Food Reads. Good Food Reads II 04.07.17
So many things for Good Food Reads this week, so little time! Today is the day that With Two Spoons is taking it on the road, as both Holly and I will be happily soaking up the sun in Arizona! Unfortunately I will soon be heading back to Minneapolis. The only saving grace is that spring time in Minneapolis is BEAUTIFUL! So as an Ode to Spring-here is this week’s Good Food Reads-dedicated to Spring!
First let’s talk donuts. DONUTS! Strawberry lemon donuts to be exact. These Strawberry Lemon Donuts by Tornadough Alli look amazing. Like eat the whole batch at one sitting amazing. In fact I may need to make these when the kids are at school-and then hide them.
Maybe I’m strange, but I also think of pasta for spring. I know, I know, it’s spring-I should be worrying about lightening things up and cutting the carbs, but when you see this Garlic Butter Asparagus Pasta by Diethood and this Lemon Cream Pasta Primavera by Foodtastic Mom, you are going to see exactly why I think pasta belongs to springtime. Because it does.
One of my spring resolutions is to make my own bread. I’ve done homemade bread and it is a million times better than that processed pre-sliced stuff from the supermarket. I even went so far as to take home some sourdough starter from a friend, which I promptly killed. (I know who kills sourdough starter? That isn’t even an easy thing to do) I haven’t had the heart to tell my friend (although she’s probably reading it here-I’m so sorry Retu!). BUT-I came across this recipe for Sourdough Starter by WellFloured. So maybe I’ll make my own. And keep it alive this time.
So from bread, a normal transition would be butter, right? Check out this Basil Lime Vegan Butter by Healing Tomato, which is a sensational way to use up those herbs that are about to die an awful death. And a great use for those herbs you are going to plant this summer. Just remember basil likes it hot and dry. Hot and dry. (And now you’re going to click to check it out, not because of the basil, but because you, like me, are saying “what the hell is vegan butter”? Well, I still don’t have an answer to that, but I bet you can make this with regular butter as well. Pretty cool indeed!)
As a blogger, I’m frequently checking out other blogs. Bloggers are doing such amazing food these days. But every once in awhile, I come across a dish where I say-“If I can make this at home, my life will be complete”. And that is how I feel about Food, Faith, Fitness’ Larb Gai Thai Chicken Skillet. One look at the photos and I didn’t even need to know what the rest of the words meant. All I know is it looked like my idea of heaven in a cast iron skillet, and that is saying a lot for something that does not contain chocolate. I will definitely be making this at my house. And if this does it for you too, well-then you’re invited.
As I’m writing this with a glass of wine in hand, relaxing in the beautiful Arizona twilight, I will tell you about the Instant Pot I bought for my in-laws. We have been using it for everything this week, which is great because in Arizona, who wants to turn on the oven? Tonight’s dinner was Flank Steak with Chimichurri-a recipe from our own blog, with Sweet Potatoes in the Instant Pot from A Pinch of Healthy and Pressure Cooker Corn on the Cob by This Old Gal. Is there anything this miracle machine can’t do?
Finally, a recipe for the artists among us. There is a lot of great food art out there right now (for some reason Easter seems to spark a lot of creative juices). I really like this Easter Bunny Bread by Foodie with Family because, well, I’m not sure exactly why, other than I am a bread addict. Pretty sure this one would be loved by kids and adults alike. I’m not usually one who attempts food art, but this one I might actually try. Stay tuned.

Since welcoming my daughter in October, I’ve been on a bit of a mini-maternity leave from the blog, focusing mostly on Good Food Reads each week while Lane (bless!) has really taken over the cooking posts. As many of you know, having a newborn really limits the time for cooking and kitchen shenanigans. Well, I’m starting to slowly dip my toes back into the land of the cooking! Here we are: 2017. After a crazy end to 2016 in so many ways, I am enjoying the mental reset that a new year brings. I’m not generally one for a whole list of resolutions, but I do tend to enjoy the common January focus on health, organization, and goal setting. This week’s Good Food Reads definitely reflect my current need for light, cleaner foods, and ways to get myself a little more put together – especially in the kitchen!
As we begin the new year, we are also looking to bring some changes to the bl0g. We’d love to know what you want to see more of in this space. Good Food Reads for January 4, 2017
I’ve been keeping my eye out for new smoothie recipes that I can use for a quick snack or breakfast with my little guy. To be honest, I’m a bit over the green smoothie and I think this Carrot-Orange Smoothie might be just the thing to change up my routine a bit.
When it comes to breakfast, there’s very little my son loves more than pancakes. In an attempt to get a little more nutrition into those glorious carb filled breakfasts, I’m going to try these Cottage Cheese Pancakes from Weelicious.
The end of my maternity leave is fast approaching and I’m looking for some go to recipes to bring for lunches and dinners when I’m at work. The nature of my job means that I need something nutritious, easy to eat, and that doesn’t really require heating. I think these Lentil Protein Bowls from Heartbeet Kitchen will be a great option!
You guys know I’m a huge sucker for a one-pot recipe. I love to cook. I do not love to do dishes. My latest find is this recipe for Garlic Lemon Herb Mediterranean Chicken and Potatoes (Cafe Delites).
Mini Salmon Cakes with Roasted Red Peppers and Feta from Andie Mitchell. These little beauties are on my menu for later this week. Can’t wait to try them!
I will never stop loving brussels sprouts. I know, I know. But pair them with some salty bacon or prosciutto and they really are a thing to behold. Here, they are placed in a salad with pomegranate seeds, prosciutto and feta cheese. So many of my favorites all in one dish! Roasted Brussels Sprouts Salad with Prosciutto (Happy Foods)
Simple Carrot Ginger Soup from Love and Lemons. This is one of those recipes that makes me feel all virtuous in my food choices. It’s also just really darn good!
And…because I’m really not that virtuous in my food choices: Bread Pudding with Bourbon Caramel Sauce from Let’s Eat Cake. It’s all about balance, right?!?!

The countdown is ON. With only a few days until Christmas (and Hanukkah, too!), my kitchen is a busy place. With a newborn at home, I’m leaving most of the holiday baking to my amazing mother and focusing on simple dinners for my family – hearty, comforting foods that warm up the cold Decmeber days. We’ve been eating a lot of soups and slow cooker dishes, but also experimenting with roasted fish and comforting curries. Oh, friends, do I have some good recipes for you in this week’s edition of Good Food Reads. I’ve scoured the ole internet in search of food inspiration and tricks and have a list that is filled with sweets, treats, and comfort foods! As we amble on towards the holidays, I know we could all use a few recipes for appetizers and cocktails, so you’ll find some of those below as well. And, because all of those holiday festivities are usually bookended by busy work days and weeks, there are a few easy crockpot recipes in there to add to your own collection of Good Food Reads and go-to recipes. Now, let me introduce your Good Food Reads for December 7th!
Carrot Cake Cinnamon Rolls from Joy the Baker. Joy is always an inspiration when it comes to really tasty baked goods and this recipe for carrot cake cinnamon rolls looks amazing. I’m hoping to bake up a pan of these along side my usual Christmas morning cinnamon roll recipe.
Roasted Salmon Glazed with Brown Sugar and Mustard via the NYT. My three year old loves salmon, which I usually serve simply roasted and topped with a dollop of good pesto. This recipe coats the lovely fish in a mix of brown sugar and mustard, which should provide a great blend of sweet and tangy. YUM.
Bacon Blue Cheese Caramelized Onion Tart from Dinner, Then Dessert. Oh, you guys, I need to make these. Bacon is essentially one of my love languages and now that I’m no longer pregnant, I’m back on the Blue Cheese train full time. Bring. It. On.
Holiday Cocktails, featuring an Orange Cranberry Mimosa (yum!) from Wear + Where + Well. No explanation needed for this one. It’s the holidays. Have a cocktail. Or two.
Toffee Apple Eclair Cake from Lemons for Lulu is a great, no-bake take on the classic refrigerator cookie cake. I’m thinking this would be fun for New Year’s Day!
I have had really good luck with a lot of the recipes from Weelicious, which focuses on family and kid friendly food that isn’t “kid food.” Great, right? Next up for our family is this Crockpot Hawaiian Chicken.
A Healthier Take on Starbucks’ Peppermint Mocha Latte from the genius folks at Cooking Light, because we could all probably use a few more dollars and a few less calories right now. Oh, is that just me?!?!
I’m always looking for new options for Meatless Mondays around here and this Winter Vegetable Curry via the NYT might be my next recipe to tackle. I’ve found that often Indian and other southeast asian recipes can easily feel overwhelming with the number of unusual spices but this recipe uses kitchen staples and seasonal produce. It’s already a win in my book!
Roasted Cauliflower with Jalapeño Caper Butter (The Lemon Bowl) is another option for Meatless Monday and also a great, vegetable centric option for holiday meals.
And finally, Weeknight Crockpot Meals from The Gingered Whisk, because I don’t know about you, but sometimes, you just don’t want to cook.

Well friends, here we are. The day before Thanksgiving. I’m sure that most of you are busy getting ready to welcome friends and family to your homes or to travel to meet with loved ones and share a (likely huge!) meal. I look forward every year to the traditional foods of Thanksgiving. I love mashed potatoes, roasted brussels sprouts, and dixie pie. For me, the turkey is ok, but the real game is in the sides.
