Good Food Reads: Egg-citing Chicken Recipes!

Are you ready for some Egg-citing Chicken Recipes? Yeah, I went there. And I don’t care. After a long day at work, I’ve been trying to come up with a fun title for this week’s Good Food Reads, which is all about great new recipes for that kitchen staple: chicken. As it turns out, when you are tired and start playing around with chicken puns, it rapidly degenerates into fits of laughter about bad, kid-style chicken jokes. Good times, friends, good times.

Chicken puns aside, I really do have some great new recipes for you all this week. I always keep a variety of chicken in my freezer, ready for last minute dinners or recipe experimentation. It’s inexpensive, relatively healthy, and generally quick to prepare. What’s not to love? My biggest complaint with chicken is that it can easily get a little boring so I’m always on the lookout for recipes to spice it up (both literally and figuratively)….

Sparkling Grapefruit & Gin Cocktail

It seems like everyone has their go-to cocktail. The one that they can order anywhere, without a menu or a second thought. Mine is the gin and tonic. I love the crisp, refreshing, almost bitter flavor and the bubbles of the tonic water.Sparkling Grapefruit & Gin Cocktail

I first started drinking gin and tonics years ago while on my honeymoon. My husband and I were at a small resort south of Playa del Carmen, Mexico. Though I had spent plenty of time in Mexico prior to that trip, I had never been to the Riviera Maya in early June. Let’s just say, it’s a whole different world in the summer! It was HOT. Sweltering, stifling, tropical heat from sun up to well past sun down. I don’t know if it’s the warm weather or the abundance of fresh veggies, but in the summer I have a serious need to eat salads just about every day. More often than not, I just chop up whatever I have in my fridge at the time and toss it into a giant bowl with a handful of lettuce or spinach and call it a day. Good Food Reads: Memorial Day Weekend!

It is a bit hard to believe that the unofficial kickoff to summer is almost here! Since we had nearly two feet of fresh snow here just over a month ago, it still feels a little strange to be sitting in the 90 degree heat on my porch today. Instant Pot Coconut Curry Chickpeas

Like so many others, I’ve become somewhat of an Instant Pot fanatic. When I first bought my Instant Pot, it sat in the box for about six months, coming out only to serve as a glorified rice maker. Now, don’t get me wrong, it’s a great rice maker, but I didn’t really appreciate just how great this kitchen instrument was until I started using it to fast track healthy dinners for my family. Over the past year, it’s become a go-to tool for soups, stews, roasts, and countless large batches of quinoa. I love that it allows me to produce meals that taste like I’ve been working on them all day, but in reality, came together in less than an hour.  My latest IP favorite? This simple recipe for Instant Pot Coconut Curry Chickpeas.

Good Food Reads: Thinking Outside the (Lunch) Box

I don’t know about you, but I frequently feel like I’m in a bit of a lunch rut. Either I’m busy and forget about lunch altogether or I jam in a quick sandwich or protein bar and call it a day. One of my “grown up resolutions” this year was to make lunch feel a little more special. To make things that are tasty, beautiful, and (mostly) nutritious. While I haven’t always kept to that plan, I’ve definitely noticed that on the days I make a little more effort for lunch, I’m always glad I did. I didn’t start drinking coffee until just before my 30th birthday, but now it’s the first thing I reach for in the mornings. When the weather gets warm, I drink mostly cold press coffee. Less bitter than conventionally brewed coffee, it’s perfect for hot summer days. It also makes a great base for iced lattes you can make at home, like our new Iced Lavender Almond Milk Latte.

If you read my post on Tuesday, you know that I LOVE berry season. After a winter of apples, bananas, and citrus fruits, I just want to eat all the berries, all the time. My kids join me in this love affair and suffice it to say, we spend a lot of our fruit and veggie budget on strawberries, blueberries, raspberries, and blackberries this time of year. With that in mind, I’ve gathered up a few recipes this week all featuring my favorite fruits! Veggie Quinoa Cakes

I’m not gonna lie, sometimes feeding my daughter is tough. She is the sweetest, funniest little girl in the world but at 18 months old, she’s also a tiny tyrant when it comes to food. If it isn’t a fruit, yogurt, bread, or cheese, she isn’t having any of it. I’m fairly certain that if it weren’t for those handy pouches with veggies mixed in, she wouldn’t get within 10 feet of a vegetable. It breaks my food blogger/veggie loving heart just a little. So, in an attempt to get my daughter to eat something other than cheese, I recently came up with these delicious little Veggie Quinoa Cakes. They’re easy to make (and freezable!) and packed with protein and veggies, making them a great option for the entire family!
