Whew! It’s been a busy one around here and I am so glad that it’s Friday (despite the fact that I’m working all weekend – sigh). Ricotta Toast with Caramelized Red Onion and Fig Tapenade
With Christmas and New Year’s just around the corner, I have holiday entertaining on the brain. In addition to hosting a few Christmas parties, my husband and I usually have a small New Year’s Eve celebration with close friends. All of these gatherings are so fun, but planning so much food can get overwhelming. To keep it simple, I love to center the menu around heavier appetizers that are easily prepared ahead of time and endlessly customizable to the dietary needs and preferences of our guests. This year, I’m planning to make these Ricotta Toast with Caramelized Red Onion and Fig Tapenade for more than a few gatherings!

It’s been a long, fun week and I don’t know about you, but I’m really excited for a weekend off with my family. As we are all coming down off the candy high of Halloween, I’ve been thinking about the things I’m loving lately and things that are saving my life (in the most lighthearted way!).

One of the things that I’ve come to love most about my Instant Pot is the ability to make quick soups and stews that taste like they have been simmering away all day. It’s been a crazy, but fun, few weeks around here. Lane has been jaunting around Europe on an amazing anniversary trip (Happy Anniversary, L&J!) and I’ve been blending work with a fun little get away of my own (more on that later). In the midst of it all, life has been busy, busy, busy and these are the fun little things that are making it better and keeping me sane. Apple Walnut Granola
My husband eats a bowl of yogurt with granola every single morning. After years of watching him pour bowls of sugar laden, processed granola that tasted kind of like cardboard, I decided to take things into my own hands and make my own. One of the great things about granola is how versatile it is. I’ve made a tropical granola with dried fruit and macadamia nuts and a granola with maple, cranberry, and crunchy quinoa. This Apple Walnut Granola is my ode to fall.

Despite my love of baking, when it comes to snacks, I am generally a salty/crunchy kind of snack girl. Donuts, cookies, cake? I can take them or leave them most days. GFR: A Cozy Friday Five
Hey Friends! It seems overnight, the cold arrived in Minnesota. I celebrated my birthday this past weekend with a string of gorgeous (and hot!) 90 degree days. It felt like summer’s last big hurrah and we soaked it up. Monday afternoon, the storms rolled in and so did the cool weather. While I’ve been looking forward to some crisper fall evenings, I can’t say I’m loving this chilly, damp, rainy business. Honey Harissa Chicken Wings
If you’ve been reading our blog for a while, you might know that I used to be a vegetarian. I stopped eating meat in middle school and didn’t venture back into omnivore land until just before I got married. After so many years without meat, I definitely still have no problems with a veggie heavy diet but I do have a confession to make: I totally regret missing out on years of bacon and chicken wings. Yes, that’s right. I missed out on nearly 15 years of chicken wings and I’m now on a quest to make up for it.
