Well, now that Lane is officially done with her Whole30, I can post this recipe without too much co-blogger guilt, right? While I didn’t do the Whole30 with her, I did actually enjoy keeping the blog focus a little on the healthier side. I’m definitely someone who tries to keep my diet 80/20 – meaning that eighty percent of the time, I try to make good choices. The other twenty percent? I eat what I want. It’s been a good balance for me and helps me to enjoy treats while overall maintaining a healthy life. Now, when it comes to these new Apple Cinnamon Crescent Rolls with Dulce de Leche, well, these fall clearly into the twenty percent! 2019 With Two Spoons Projects!
Happy Friday, friends! It’s the end of another great week and – almost – the end of January already. How did that happen? It seems like the holidays flew by and the start of the year has done the same. Between setting and starting New Year’s goals and launching head first into those January healthy habits (hellooooo, Whole30!), the month really has raced past. I know that a lot of people have been following Lane’s progress with Whole30 and it’s been really great to watch her absolutely kill it with her preparation, dedication, and super awesome meals. Fitness as A Food Blogger
Are you a fan of New Year’s Resolutions? I definitely used to be. I would carefully craft long lists of all the new things I was going to do/see/be/improve in the coming year. I would excitedly make plans and then – inevitably – about two weeks later, life would get in the way and all of those things would fall by the wayside. Over the past few years, I’ve realized that as much as I love the idea of resolutions, they really weren’t working for me. So I gave them up. And you know what? It’s been great. Instead of resolutions, I have used the start of the New Year as a simple opportunity to reflect on things that have worked for me in past year as well as those things that didn’t. Lately, I’ve been thinking a lot about fitness and keeping strong and healthy in 2019. With that in mind, our Good Food Reads this week is some thoughts on fitness as a food blogger!

The New Year is here and with it, comes a whole lot of focus on health and wellness. It’s holiday crunch time and I don’t know about you, but I’m feeling a little bit of the pressure. One of my favorite things to do during these busy times is to use make ahead or easy prep recipes to decrease my workload on big cooking days, like Christmas! I love to have a special breakfast treat for Christmas morning, but I don’t love the idea of being stuck in the kitchen while everyone else is opening gifts or sitting by the fireplace. There’s something so warm and cozy about a good brunch, right? I always appreciate a lazy morning full of good food during this crazy holiday season. Last week I was walking through our local grocery store and saw that the dairy case was full of egg nog. Typically, it’s not the first thing I reach for this time of year (it’s so sweet!) but my husband loves it so I figured I would pick him up a carton as a little treat to kick off the holidays. As I stood there trying to decide what kind to buy, I had an idea for this delicious Egg Nog French Toast….
Pumpkin Ricotta Pancakes
I feel like I should have titled this blog post “confessions of a food blogger” because I’m about to let you in on a dirty little secret. Are you ready? Here it goes: I am the parent of a picky eater. A really picky eater. Yes, that is correct. This food blogging mama has a little one who will barely eat anything resembling real food. She is my two year old, blonde, sassy little bit of dynamite who has a definite mind of her own, especially when it comes to food. She essentially has five approved foods: cheese, yogurt, bread, scrambled eggs, and pancakes. Anything outside those groups is almost guaranteed to be refused and so I’ve had to get creative in my cooking. I developed these Pumpkin Ricotta Pancakes to try and sneak a little protein into my girl’s favorite breakfast. Our whole family loved them and I thought you might, too!
