Cinnamon churro cupcakes?  Did I say “churro” cupcakes?  Like those sinfully delicious pieces of sugary fried pastry you can get (for a dollar!!!!) at Costco?  Yep, just like that, but I dare say a little healthier (well, at least not deep fried).  I’ve been seriously craving sugar lately (which is a little different from my usual salt cravings, and also different from my crunch cravings, and maybe even different from my ice cream cravings…never mind, my cravings may be too numerous to categorize).  These cupcakes really hit the spot!…

Radish and Cucumber Tzatziki
I’ve been slightly obsessed with radishes lately. I am seeing them everywhere…beautiful pictures in magazines, huge bundles at the farmer’s market, piles at the co-op. They are gorgeous this time of year, spicy, crunchy and so fresh! So when I came across this recipe I knew I had to make it. And I’m so, so glad I did! Similar to the gyro dip you always ask for more of (OK, well I also ask for more of), with the same addictive qualities….
Street Corn Salad
Fresh, creamy Street Corn Salad will be an instant hit at your next gathering.
It is true, I’ve had a thing for corn lately.  And yes, I know that Cinco de Mayo was yesterday.  But is anyone truly against celebrating a little bit longer?  Like all summer?  Yep, seems like a great idea to me!  I have recently discovered elotes–Mexican Street Corn– and all I can say, is if you haven’t discovered them yet, you are missing out.  Admittedly, though, elotes are messy-and there are times when messy just won’t work (think first dates and work parties).  This is where Street Corn Salad comes in.  All of the same flavors as elotes, hold the napkins….

Parker House Rolls
Parker House Rolls. What is better than fresh bread? Yet for years I was really intimidated by anything that needed to “rise”. I thought that it was easier to buy bread and that there was not much difference in the taste. Well, I was probably right on the first count, but I was oh so wrong on the second count. There is nothing like fresh bread!…
Peanut Vegetable Noodles
Vegetables. A rainbow of vegetables of every color. To me these beautiful vegetables herald summer, and we’re all ready for that here in Minnesota! I’ve been trying to add more vegetables to the foods that my family has been eating as, I must admit, we have slipped into a rut over the winter. I’d also like to be a better steward of the planet by eating less meat (this is sadly not so easy for my family). One of the things I am trying to incorporate into our weekly meal plan is Meatless Monday. These Peanut Vegetable Noodles fit the bill!…
Rosemary Chipotle Spiced Nuts
Party time in my house tonight. Tonight is book club and I am hosting! What is the book you ask? Silly you*, now let’s get on to important details! Every time I host, I am excited to put together a menu that I think that my friends would enjoy. But, I also work a full time job, have 2 kids and don’t have a ton of time to make a lot of complicated dishes. Enter these rosemary chipotle spiced nuts. Simple, yet elegant. Quick, yet so, so tasty….
Summertime Salsa
I know, I know, I’ve written many times lately about the awesome weather we’re having here in Minnesota, but I just can’t say enough about it. This past weekend we have truly entered patio season, and I am embracing it. Of course as the weather heats up, and the sun begins to shine, my tastes trend towards those of summer-tomatoes, cilantro, onions, garlic…basically, salsa!…
Lemon Blueberry Bundt Cake
Celebration indeed! This Lemon Blueberry Bundt Cake will make everyone want to celebrate!
Ahhhh, vacation. Yep, that is right, vacation. Much needed, well-deserved, greatly enjoyed. Don’t we all love going on vacation? Well, my in-laws have decided to “winter” in Arizona 5 months of the year, truly living the ultimate vacation. Unfortunately that means that they aren’t always available to celebrate my youngest child’s birthday on his actual birthday date (in February). No problem, he’s now old enough to understand that not having grandma and grandpa here on his birthday just means presents in the mail (so awesome) and another celebration at a later date (even more awesome). Who doesn’t love another celebration?…
Mexican Street Corn
Mexican Street Corn is an easy way to elevate your corn on the cob. Flavorful and juicy, this is a side dish that will please everyone. In fact you’ll defintely want to make extras!
As many of you know, I usually pack up my family and head to sunny Arizona for spring break. My in-laws have a winter home there, and we all love to hang out together, soaking up the sun by the pool, hiking in the mountains, and yes-I usually cook to my heart’s content. This is win-win for all of us, as my mother-in-law is a willing sous chef, my kids like to get in on the action and my father-in-law loves to try new foods. This year, I had all kinds of new favorites to try out on them, and they didn’t disappoint….
Lemony White Bean Salad-in-a-Jar
After a long weekend of holiday eating, I have decided to go with something lighter today, Lemony White Bean Salad-in-a-Jar. Yes, another salad. After all it’s spring, and all of the sudden the greens are plentiful and I actually crave them. And this particular salad, Lemony White Bean Salad-in-a-Jar, has some bonus features. This salad is portable AND is able to be made ahead of time. That means it is great for work, great for bringing to a dinner party, great to bring on a picnic (yep -I hold out great hope that picnic weather is coming soon!)….
