There’s something so warm and cozy about a good brunch, right? I always appreciate a lazy morning full of good food during this crazy holiday season. Last week I was walking through our local grocery store and saw that the dairy case was full of egg nog. Typically, it’s not the first thing I reach for this time of year (it’s so sweet!) but my husband loves it so I figured I would pick him up a carton as a little treat to kick off the holidays. Pumpkin Ricotta Pancakes

I feel like I should have titled this blog post “confessions of a food blogger” because I’m about to let you in on a dirty little secret. Are you ready? Here it goes: I am the parent of a picky eater. A really picky eater. Yes, that is correct. This food blogging mama has a little one who will barely eat anything resembling real food. She is my two year old, blonde, sassy little bit of dynamite who has a definite mind of her own, especially when it comes to food. She essentially has five approved foods: cheese, yogurt, bread, scrambled eggs, and pancakes. Anything outside those groups is almost guaranteed to be refused and so I’ve had to get creative in my cooking. I developed these Pumpkin Ricotta Pancakes to try and sneak a little protein into my girl’s favorite breakfast. Our whole family loved them and I thought you might, too!

Chocolate Chip Zucchini Bread

Has anyone else had a bumper crop of zucchini this summer?  My tiny backyard garden has been producing zucchini which are the size of clubs.  I’ve shredded and frozen more zucchini this summer than I’ve seen in my life.  And of course as I’ve been shredding my zucchini, I’ve had to make my Chocolate Chip Zucchini Bread. Strangely, even though this quick bread really can’t be qualified as “healthy”, in my book it is because…well, ZUCCHINI!

Good Food Reads: Breakfast Time!

Growing up, I wasn’t much of a morning person. Truth be told, I’m still not much of one now. When I was little, my parents knew to give me some space in the morning. Quiet time to ease into the day. In addition to some quiet time, I usually didn’t want to eat breakfast right away. I’m not sure why, since now breakfast (and coffee!) is one of my favorite meals of the day. I love the wide range of breakfast treats, from sweets and baked goods, to savory omelets and – of course – bacon. My one regret from my vegetarian days really is that I missed out on many years of bacon! As we approach the Easter weekend, I’ve been planning our Easter breakfast menu and it got me thinking about and searching for some new and fun breakfast recipes to try. One of my favorite parts of the Christmas holiday is breakfast on Christmas Morning. Remember that Quaker oatmeal?  The kind that came in packets?  The one that came in many different flavors?  I was a particular fan of the Maple Brown Sugar flavor, but the Apple Cinnamon flavor came in a close second.  It was always hard to choose!
