I remember my mom pulling out that little red Campbell’s can and adding water in a small saucepan on our stove. Ready in a jiffy (no better lunch when you have 3 little kids). But now that I’m older and like to make things from scratch, I know I can make this without relying on a single can! And you can too. Whole food ingredients only. And once I received an Instant Pot, I knew exactly what I needed to develop…a recipe for my childhood favorite. Presto…Instant Pot Bean and Bacon Soup was born.

I think anyone who knows me well is aware of the fact that I have a major soup addiction. I can eat it pretty much all day, any day. Lunch? Awesome. Dinner? Definitely. I’ve even been known to have some for breakfast. I love hearty soups like our lasagna soup, spicy vegetable based versions (try our black bean version here), and pretty much anything you can put cheese in, like our Chipotle and Stout Chili. When time allows, I love to bust out my trusty dutch oven, chop a bunch of vegetables, and let something cook all day. The house fills with amazing smells and I go about my day, knowing a satisfying meal is a few hours away. Let’s be real, though, most days as a busy working mama of two littles are not super well suited to time intensive recipes. Dinner needs to get on the table and toddlers need to be chased around. Remember that Quaker oatmeal? The kind that came in packets? The one that came in many different flavors? I was a particular fan of the Maple Brown Sugar flavor, but the Apple Cinnamon flavor came in a close second. It was always hard to choose! I don’t know if it’s still around, but I figured it would be probably be pretty easy to make at home. I know you’ve already heard about my great love affair with the Instant Pot. I’ve gone and on about the magic of this kitchen appliance and as summer is coming I’m even more excited to have a great way to cook without having to turn the oven on and heat up my house. But so many people are asking me-what are you actually making in it? Certainly a good (and easy) way to start is my Instant Pot Chipotle Black Bean Soup (it’s even vegan), but if that isn’t your jam-then may I recommend what we’ve been eating on repeat? The Instant Pot. It’s all you hear about these days. But a pressure cooker? I wasn’t sold. And my husband was threatening me if I bought ONE. MORE. KITCHEN. GADGET. But, me, being me, went ahead and got an Instant Pot (read further for my marriage saving advice). And when I finally took my Instant Pot out of the box I found I just cannot stop using it. This gadget is magical! Pure magic! If you don’t have one, it’s definitely time to go get one. In fact, I like mine so much, I shipped one to my in-laws, just so I could keep cooking with it when we visited on Spring Break!
