Good Food Reads: Thinking Outside the (Lunch) Box

I don’t know about you, but I frequently feel like I’m in a bit of a lunch rut. Either I’m busy and forget about lunch altogether or I jam in a quick sandwich or protein bar and call it a day. One of my “grown up resolutions” this year was to make lunch feel a little more special. To make things that are tasty, beautiful, and (mostly) nutritious. While I haven’t always kept to that plan, I’ve definitely noticed that on the days I make a little more effort for lunch, I’m always glad I did. We recently reached out to some blogger friends (hi, friends!) and asked for their recommendations for new lunch ideas. Boy, oh boy, did we get some great new recipes. Farro Salad with Salmon and Roasted Vegetables

You might have heard this story before, (you’ve probably lived this story before) but this particular ending is delicious! This Farro Salad is worth reading about!

I recently went out to lunch with a group of friends, at a restaurant I go to frequently.  While looking at the menu, I was tempted to order my “usual”, but instead decided to take a chance on this Farro Salad.  Thank goodness I did!  As soon as I started eating, I decided this was a dish I needed to create at home.  ASAP.

A Moveable Feast: Grilled Peach and Arugula Salad

EDIT Web Grilled PeachWell, this is post is officially a day later than I had hoped but I guess that’s what happens when you head out of town and forget your laptop charger. Oops! With a few days away from work and no plans in hand, my husband and I made a last minute decision to head to his family’s cabin in the northern Minnesota lake country. We invited some friends to join us and had a great couple of days of sun, sand, water, and some good food. I love the simplicity of summer foods – marinades and grilled chicken or burgers, fresh fish, and plenty of salads. As part of our Southern themed dinner party earlier this summer, Lane and I tossed together this Grilled Peach and Arugula Salad to lighten up an otherwise heavy menu….

Good Food Reads

It has been a crazy busy week, as most of them are towards the end of the school year.  My kids don’t have their last day of school until next week, but the past two weeks have been chock full of end of the year parties, teacher gifts, graduation festivities, end of the year orchestra concerts, dance recitals, and let’s not forget the never ending soccer games!  When you put that on top of a full time work schedule, well…whew, I’m starting to get tuckered out!  And I must admit my belly is growing very tired of all of the fast and fast casual food we’ve been eating (not to mention guilty) as we fly around from one activity from another.  It’s time to reintroduce vegetables and clean eating to our diets.  These salads we’ve found all over the internet will be a great way to start that process…and they are anything but boring!  So keep reading for a Good Food Reads dedicated to salads!…

Asian Chicken Salad with Grilled Vegetables

My teenaged daughter.  Don’t you love when a post starts with “my teenaged daughter”?  I’m sure all of you with teenagers know what is coming next.  My teenaged daughter has a complicated relationship with food.  Loves all sweets, but historically she’s much more picky when it comes to food with any nutritional benefit.  (Read on to learn all about where we went wrong with teaching her to eat!)  So when she recently found a salad at a local restaurant that she liked, I raced to recreate it so she could eat it at home.  And although it’s not exactly the same, Asian Chicken Salad with Grilled Vegetables was a hit with everyone, but especially with my teenaged daughter.  #momwin
