I’m not gonna lie, sometimes feeding my daughter is tough. She is the sweetest, funniest little girl in the world but at 18 months old, she’s also a tiny tyrant when it comes to food. If it isn’t a fruit, yogurt, bread, or cheese, she isn’t having any of it. I’m fairly certain that if it weren’t for those handy pouches with veggies mixed in, she wouldn’t get within 10 feet of a vegetable. It breaks my food blogger/veggie loving heart just a little. So, in an attempt to get my daughter to eat something other than cheese, I recently came up with these delicious little Veggie Quinoa Cakes. They’re easy to make (and freezable!) and packed with protein and veggies, making them a great option for the entire family!

It has been a crazy busy week, as most of them are towards the end of the school year. My kids don’t have their last day of school until next week, but the past two weeks have been chock full of end of the year parties, teacher gifts, graduation festivities, end of the year orchestra concerts, dance recitals, and let’s not forget the never ending soccer games! When you put that on top of a full time work schedule, well…whew, I’m starting to get tuckered out! And I must admit my belly is growing very tired of all of the fast and fast casual food we’ve been eating (not to mention guilty) as we fly around from one activity from another. My teenaged daughter. Don’t you love when a post starts with “my teenaged daughter”? I’m sure all of you with teenagers know what is coming next. My teenaged daughter has a complicated relationship with food. Loves all sweets, but historically she’s much more picky when it comes to food with any nutritional benefit. For sure, this awesome trip will color my next few culinary choices for this blog, but for now, re-entry is HARD.
