I have a confession: I’m not a huge fan of Valentine’s Day. I know, I know. It’s a holiday celebrating love. What’s not to, well, love? I adore the idea of celebrating those we cherish but truthfully, I sometimes think it’s all just a bit much. Overpriced flowers. Complicated and overpriced dinners. Boxes of chocolates filled with strange flavors where you just pray for the chocolate covered caramels. Well, I can’t do much about the flowers or the prix-fixe dinners, but I am going to share an amazing recipe for Dark Chocolate Peanut Butter Cups that are simple, inexpensive, and way better than those heart shaped box options! Your Valentine will love them. And so will you.

A few years back, I was given a great cookbook called Keepers. Put together by two home cooks with years of kitchen experience (and time working at Saveur), the book is a collection of tried and true recipes that they have collected over the years. I have my own book of keepers. A beat up white, three ring binder, it holds all of the recipes my husband lovingly calls “The List.” Whenever I make a new recipe he really loves, he tells me to put it on The List. It’s the highest kitchen compliment in our home. Over the years I’ve adapted many of these recipes to our own tastes, but there are a few classics that I make over and over again, just as they were written. Instant Pot Salsa Verde Chicken Soup
I think anyone who knows me well is aware of the fact that I have a major soup addiction. I can eat it pretty much all day, any day. Lunch? Awesome. Dinner? Definitely. I’ve even been known to have some for breakfast. I love hearty soups like our lasagna soup, spicy vegetable based versions (try our black bean version here), and pretty much anything you can put cheese in, like our Chipotle and Stout Chili. When time allows, I love to bust out my trusty dutch oven, chop a bunch of vegetables, and let something cook all day. The house fills with amazing smells and I go about my day, knowing a satisfying meal is a few hours away. Let’s be real, though, most days as a busy working mama of two littles are not super well suited to time intensive recipes. Dinner needs to get on the table and toddlers need to be chased around. Enter: our Instant Pot Salsa Verde Chicken Soup….
