It is possible some of you are going to say I took too many liberties with this Chipotle Caesar Salad, and maybe that is true. If you are looking for a very traditional version of a caesar salad-well, you may have to keep looking. This salad isn’t your mother’s caesar salad after all. This salad features a lighter Caesar dressing, a hint of spicy chipotle and best of all bacon. And if this doesn’t intrigue you, well maybe we weren’t meant to be friends after all……
Muffins. Oh, how I love you. And oh how very picky I am about muffins. Why? Well, if I’m going to eat cake for breakfast (because, let’s face it, they really are just unfrosted cupcakes that we all pretend are not desserts), I want them to be juuuuuust right. Not too sweet, definitely not too dry, and studded with the sweetest bits of tart fruit. After a long search, I’ve finally found a recipe for the best Lemon Blueberry Muffins and I’m going to share it with you today. You’re welcome.
I’ve long been a fan of America’s Test Kitchen and a few years ago was given a copy of their Family Cookbook (I use this edition; here is a link to the newest one). Like just about everything ATK does, this cookbook is filled with great, near foolproof recipes for just about anything you could want. One of my favorite finds in that book is the recipe for “Big Beautiful Muffins.” You guys, you have to have make these muffins. They are super easy to make and (scout’s honor!) turn out perfectly every time. I love to make a double batch and freeze them for later – 20 seconds in a microwave and they make a perfectly fresh on-the-go breakfast!…
It’s Good (Food) Reads time again and I’m back from vacation and excited to share some great food inspiration with you all! After being away on vacation and not cooking for a while, I’m am ready to head back into my kitchen and try some new things. We love finding and sharing new recipes and videos with you, so if you have something you love and want us to share, be sure to send it our way! Oh, and one more thing – Lane forgot to mention that Monday’s post was our 100th! I can hardly believe we’ve already hit a fun little milestone. Thanks for following along. We can’t wait to see what the next 100 bring.
Ok, here we go…
BLT Balsamic Chicken Avocado and Feta Salad (Cafe Delites) is pretty much the salad of my summer dreams. Does anyone else feel the need to detox with nothing but salads after a vacation? I just want to eat allllllll the greens. The avocado and feta doesn’t hurt one bit, though!
Summer Squash Pizza (Smitten Kitchen) makes me feel all virtuous about pizza. And using summer’s bounty of zucchini and squash. Plus, it’s Smitten Kitchen, which is pretty much a guaranteed winner in my experience.
I think this may blur the line with the whole salad thing but I don’t really care. I’m saving this one for a night when my hubby is gone as he hates nectarines (sad but true). Still, I’m really excited to try this Nectarine Panzanella with Homemade Garlic Croutons (My Kitchen Love)
Super Healthy Broccoli Salad (The Fed Up Foodie). Like I said, I can’t get enough of the salads right now!
Cheesy Jalapeno Bacon Meatballs (Hey Grill, Hey) because I can’t always be virtuous. Plus, my little guy loves meatballs and this sounds like a fun take on a classic.
Frozen Peach Lemonade (As Easy As Apple Pie). Without vodka for now. With vodka later. YES.
Healthy Hawaiian Chicken Noodle Bowls (Fit Foodie Finds). My husband and I just returned from Hawaii and I can’t wait to make these noodle bowls from MN fave Fit Foodie Finds.
Challah Donuts (Molly Yeh). Because seriously, CHALLAH DONUTS. I can’t even. Someone please make these for me? Pretty please?
Blueberry Caprese Salad (Floating Kitchen). Love this take on a caprese. I’m still devouring blueberries like there’s no tomorrow and this will be a fun twist on a classic summer salad.
Brown Rice Pilaf for Instant Pot (Mel’s Kitchen Cafe). Do you have an InstantPot? I am trying to find more and more recipes to take advantage of the crazy time savings with pressure cooking. This brown rice pilaf seems like a great place to start.
Asian Turkey Burgers (Andie Mitchell). I am on a quest to find a flavor filled turkey burger that doesn’t dry out and definitely doesn’t serve as a meager substitute for a traditional burger and I have high hopes for this one.
As usual, send us a message via email, FB, Twitter, or Instagram and let us know if you try and of this week’s Good (Food) Reads! Until next time…
You know those friends who have your back? Those friends who, when you hint that you might be able to use some of the extra rhubarb from their garden, give you not only rhubarb, but also a split of their rhubarb plant to plant in your own garden? Well, Amy and Peter are those friends. Amy recently gave me a whole arm load of rhubarb, not to mention a rhubarb plant that then got planted in my backyard! The only thing Amy asked in return was to see what I made with the rhubarb. Well, that sure was easy, I made this Cherry Rhubarb Crisp! So now my WHOLE family thanks you, Amy and Peter!…
I still remember my very first fish taco. I had just moved from Minneapolis to Houston, TX and it was over 100 degrees outside. I stumbled upon a little taqueria called Berryhill Baja Grill, and was introduced to the amazing flavor profile of the fish taco. I immediately called my mom and she was not quite as excited about the idea of a fish taco, which was still very foreign in the year 2000 in the midwest. I could sense her hesitation when I told her that it was at the top of my list for her next visit, until……
I hope you guys are hungry because this week’s Good (Food) Reads is chock full of recipe goodness. I’m always inspired by the other great food bloggers and home cooks out there and this week was no exception! My sweet tooth can’t wait to sample the Salted Caramel Stuffed Nutella Chocolate Cups and I have great plans for the Corn Fritters. What recipes are you looking to try this week?…
Given the choice, I am always going to pick savory over sweet. Every time. Recently though, while trying to decide what to have for dinner I decided that I wanted sweet AND savory. Enter BBQ Chicken Pizza. Every restaurant has some version of this pizza, and sure you can certainly go out and buy this kind of pizza (or even order it for delivery). But I’m here to tell you how easy it is to make-without leaving your home! So easy you should try it tonight! And even my kids will tell you, there is nothing better than homemade pizza….
Ya’ll, the heat is ON. Minneapolis is under a “heat dome” right now and with heat indices over 100 degrees, the last thing I want to be doing is cooking: enter the smoothie. A 3 minute meal that satisfies toddlers, hungry husbands, and pregnant women in one fell swoop. This Simple Summer Green Smoothie is exactly what is sounds like: Easy, green, and full of summery flavor. …
We’re having a little heat wave here in Minneapolis and needless to say, slaving over an oven doesn’t really seem all that fun when it’s 100 degrees and humid. So, instead of cooking, I’m sipping some passion fruit iced tea and ogling gorgeous foodie blogs for inspiration and saving these recipes for when it cools down a bit! It’s Good (Food) Reads for your (hot!) Wednesday afternoon…
When I first started dating my husband (and right up until we got married!), I was a vegetarian. The poor guy had to put up with many an (unusual for him) dish while eating out and eggplant parmesan was one we could both agree on. While I eat meat now, I can’t wait to try this Eggplant Parmesan Pasta Skillet from Cook Nourish Bliss.
Peanut Butter Banana Bon Bons (Joy the Baker). Lane and I have a ladies night out coming up in August and we’re in charge of desserts. I’m thinking these might be fun alongside some other fun sweet bites. What do you think, Lane?!?!?
Confession: I’m totally posting this Summer Fruit Plate (Half Baked Harvest) simply because it’s so darn beautiful and I can’t stop eating fresh fruit right now. Can someone make it for me? Pretty please?
Toasted S’More Truffle Pops (Ashlee Marie). I love that there’s a foolproof video for making these classic summer recipe inspired pops. Can’t wait to make them!
I’ve rarely met a fish taco I didn’t like. I’m thinking these might be a great weeknight dinner for our whole family: Chili Lime Fish Tacos (Pinch of Yum)
As my pregnancy progresses, I just want to eat ALL THE VEGGIES. This Kale Salad with Bacon and Blue Cheese (Gimme Some Oven) looks right up my alley. And yes, I plan to eat the blue cheese (don’t worry – I’ve found a great pasteurized version!).
Sweet Corn Risotto with Cajun Shrimp (Spoon Fork Bacon). In addition to wanting all the veggies, I am also still loving all the carbs. Risotto is a winter favorite – so comforting! – but this version with fresh sweet corn and tender spicy shrimp seems like the perfect excuse to try it in the summer.
I have been thinking about these Lemon Basil Shortbread Cookies (A Beautiful Plate) since I first saw them on Laura’s blog. My basil plants are exploding and this will be a fun way to use some in a sweet, rather than savory, dish.
140 Calorie Blueberry Banana Oat Flour Muffins (Broma Bakery), because life is all about balance, right?!?!
Rose Fruit Pops (Table For Two). These are happening as soon as I am no longer growing a child. Emily, Lane, you in?!!
Friends, that’s it for this week’s Good Food Reads. I hope you found some kitchen inspiration. See you next week!
I tried to come up with a catchier name than Cabin Burgers, I really did. But the truth of the matter is, this is the meal that the kids beg for when we head to the cabin, and thus they have always been called “Cabin Burgers”. The name just stuck, boring or not. And although the name may be boring, this burger is anything but……
