Childhood. What brings you back? For me it’s Bean and Bacon Soup.
I remember my mom pulling out that little red Campbell’s can and adding water in a small saucepan on our stove. Ready in a jiffy (no better lunch when you have 3 little kids). But now that I’m older and like to make things from scratch, I know I can make this without relying on a single can! And you can too. Whole food ingredients only. And once I received an Instant Pot, I knew exactly what I needed to develop…a recipe for my childhood favorite. Presto…Instant Pot Bean and Bacon Soup was born.

I think anyone who knows me well is aware of the fact that I have a major soup addiction. I can eat it pretty much all day, any day. Lunch? Awesome. Dinner? Definitely. I’ve even been known to have some for breakfast. I love hearty soups like our lasagna soup, spicy vegetable based versions (try our black bean version here), and pretty much anything you can put cheese in, like our Chipotle and Stout Chili. When time allows, I love to bust out my trusty dutch oven, chop a bunch of vegetables, and let something cook all day. The house fills with amazing smells and I go about my day, knowing a satisfying meal is a few hours away. Let’s be real, though, most days as a busy working mama of two littles are not super well suited to time intensive recipes. Dinner needs to get on the table and toddlers need to be chased around. Enter: our Instant Pot Salsa Verde Chicken Soup….

The easiest homemade slow cooker chicken noodle soup you will ever find (well, short of heading over to grandma’s house…)!
I don’t know about you, but I am so over all of the holiday indulgence (although I wouldn’t turn away a piece of homemade toffee-I just didn’t get around to making it this year). I’m looking forward to the lighter recipes of January. And we’ll get there, I promise. As life would have it though, influenza has hit Minneapolis hard and I know my friends and family are looking for an easy soup recipe to provide some comfort. Easy being the key word. I have gotten so many comments and questions lately on the Instant Pot. Yesterday this hilarious comment showed up on social media from my friend Dana, “So…I finally got an Instant Pot, and wouldn’t you know, the instructions said to have Lane come over and make something for you.” Although I laughed, and said that I would be SO happy to go over and make food for her (you can hold me to this, Dana!) this actually made this Friday’s Good Food Reads: Instant Pot really easy to write. Let’s talk about the Instant Pot! Read on further for some great Instant Pot recipes!

This Instant Pot Thai Butternut Squash Soup is a unique twist on an old favorite-made fast using the Instant Pot!
Winter is here in Minneapolis. Oh sure, it’s not TECHNICALLY winter (which I’m reminded of frequently by my rule following 6 year old), but Thanksgiving is over, the cold has moved in, and it’s dark hours and hours before we go to bed. (Notice I don’t say before I’m READY to go to bed…). With the cold comes the need for soup. Warm, comforting, fill-you-up soup. Like this Instant Pot Thai Butternut Squash Soup. …
