For this Good Food Reads, we are going to feature a guest recipe by the wonderfully talented Lesli Schwartz of Asian Caucasian, who I had the pleasure of meeting at the Pinch of Yum Tasty Food Photography Workshop I attended this summer.  The chosen guest recipe was for Easy Spiced Pumpkin Coconut Soup which was a huge hit in my house!  Read on so I can tell you why! Puttanesca Bruschetta

Puttanesca BruschettaI’ve had these gorgeous multicolored cherry tomatoes sitting on my kitchen counter just staring at me all week.  I finally knew what I wanted to do with them-Bruschetta!  But I didn’t want to make the plain old restaurant style Bruschetta.  I’ve wanted to make something to show off the gorgeous colors of the tomatoes.  Puttanesca Bruschetta does just that!

Puttanesca Bruschetta, now if that isn’t a mouthful, I don’t know what is.

But it is a mouthful of deliciousness.  Truly.

Instant Pot Chipotle Black Bean Soup

The Instant Pot.  It’s all you hear about these days.  But a pressure cooker?  I wasn’t sold.  And my husband was threatening me if I bought ONE. MORE. KITCHEN. GADGET.  But, me, being me, went ahead and got an Instant Pot (read further for my marriage saving advice).  And when I finally took my Instant Pot out of the box I found I just cannot stop using it.  This gadget is magical!  Pure magic!  If you don’t have one, it’s definitely time to go get one.  In fact, I like mine so much, I shipped one to my in-laws, just so I could keep cooking with it when we visited on Spring Break!
