Pomegranate White Balsamic PorkAs a former vegetarian of nearly 16 years, I am still getting my feet wet in the land of cooking meat. Unsurprisingly, when I first started back into eating and cooking meat, chicken was frequently my go to animal protein source. Easy to prepare, readily available and generally a pretty healthy choice, it can be made a million different ways with sauces or spices which is great for home cooks of all experience levels. I’ve only recently come to realize that pork – and pork loin, in particular – is a similarly great option. A lean, easy to cook meat, it works well with tons of different flavors and is quick cooking for busy nights. I love center cut pork loin chops for weeknight dinners, particularly with a simple pan sauce. I’ve frequently used a basic balsamic vinegar to make a pan sauce and have loved it. So when our friends at Queen Creek Olive Mill sent us a bottle of their Pomegranate White Balsamic Vinegar, I just had to get in the kitchen and play! The result? These Pork Chops with Pomegranate White Balsamic Pan Sauce….

Last weekend was a quiet girls’ weekend at the cabin.  No kids.  No spouses.  Wine on the dock during the day and by the fireplace in the evening.  Brilliantly colored leaves and fall temperatures.  Long walks on a treelined streets.  And comfort food.  Sweet comfort food.

Fall.  Autumn.  Football Season.  Whatever you call this gorgeous leaf color changing season, it is here-in all of it’s glory. Last week was 90 degrees here in Minneapolis, and this week is sixty degrees, windy and rainy.  Fall has arrived.  With fall comes so many of my favorite things!  Back to school, comfort food, sweaters…blankets on the side lines of the kids’ soccer games.  With back to school, though, comes the busy schedule.  And with the busy schedule you need easy weeknight meals-like this One Skillet Apple Bourbon Pork Tenderloin!

I’ve been craving vegetables lately, and that is a little odd.  Although I was a vegetarian for a year or two, (many, many years ago), I can honestly say that vegetables are not anywhere on my cravings list (I won’t lie, that is the list that starts and ends with chocolate.  And wine.)  My local grocery store has started carrying spiralized vegetables and every time I go into the store I’m drawn to their amazing colors…and then I keep walking.

Truth be told I even OWN a spiralizer.  And it’s never been out of the box.  I own a cookbook to go with it (that I’ve never opened).  All of that changed this weekend with these Butternut Squash Noodles Alfredo….
