Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms

October 23, 2018 By Lane Leave a Comment

Traveling through Italy this past month made me think hard about the foods I want to be eating.  The Italians were so amazing at taking seasonal, local foods and making them a meal.  Their food has a simplicity that is often lacking in our culture.  Polenta was a food that was on a lot of Italian menus and I happen to love it.  As soon as I got home, I started working on my new favorite fall comfort food, which I have been eating on repeat.  Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms.

Puttanesca Bruschetta

September 19, 2017 By Lane 13 Comments

Puttanesca BruschettaI’ve had these gorgeous multicolored cherry tomatoes sitting on my kitchen counter just staring at me all week.  I finally knew what I wanted to do with them-Bruschetta!  But I didn’t want to make the plain old restaurant style Bruschetta.  I’ve wanted to make something to show off the gorgeous colors of the tomatoes.  Puttanesca Bruschetta does just that!

Puttanesca Bruschetta, now if that isn’t a mouthful, I don’t know what is.

But it is a mouthful of deliciousness.  Truly.

Read further for the recipe for this amazing appetizer and an ode to one of my oldest friends!

Thank goodness we were friends before iPhone cameras and Facebook…right?

I’ve always had a thing for Falafel.  Never thought I could MAKE it though!  Turns out it’s not too hard…and oh so worth it!

Falafel with Lemon-Tahini Dressing

I recently read a book where all of the characters went outside of their comfort zones and ended up reaping some great rewards.  I truly wouldn’t have believed how much greatness was going to come from going outside of my culinary comfort zone!  I decided to dabble in vegan cooking-and YOU GUYS…!!!!

Turns out you don’t need meat, nor dairy, nor eggs to create an amazing flavorful meal!  Just try this Falafel with Lemon Tahini Dressing!…

Slow Cooker Beef and Vegetable Ragu

January 16, 2017 By Lane 22 Comments

Slow Cooker Beef and Vegetable RaguSo, I’ve been told that I can’t eat Edible Peanut Butter Chocolate Chip Cookie Dough every day.

I know, right?  Who are these haters?  Now although I’m still not sure that is completely true, I will admit that sometimes a really good hearty dinner sounds good too (maybe followed by cookie dough?).  And I guess if I’m going to be binging on cookie dough (and I am) then I better try to balance things with some vegetables.  Enter Slow Cooker Beef and Vegetable Ragu.  (And if you don’t have a slow cooker, don’t worry, I’ve got that covered too!)

As meals go, this one checks all of the boxes.  Easy to make.  Kid friendly.  Hearty.  Adaptable.  And as the days and evenings get busier (anyone else feel like they are on a constant Merry-Go-Round?) this Slow Cooker Beef and Vegetable Ragu is a good one to come home to.

Good Food Reads

It’s hard to believe that Labor Day has come and gone and for most of us, summer is (unofficially) over. I don’t know about you, but this time of year is a little like foodie limbo. I’m still loving all of the fresh flavors of summer but I’m also really starting to crave soups and stews and the comfort foods of fall and cooler weather. This week’s Good (Food) Reads is a mix of summer and fall recipe inspiration. We hope you find something to love and perhaps even a new family favorite! Until next week……

Veggified Sloppy Joes
